Ingredients:
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp black pepper
- 2 1/2 lbs lean beef chuck, cut into chunks
- 2 cans condensed beef broth (10.5 oz each)
- 1 cup Burgundy wine
- 1 cup dry red wine
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 potatoes, diced
- 1/2 lb fresh mushrooms, sliced
- 1/4 cup water
- 2 tbsp all-purpose flour
Instructions:
- In a large bowl, combine dried thyme, salt, and black pepper.
- Add the chunks of beef to the bowl and toss until evenly coated.
- In a large pot, heat oil over medium heat.
- Add half of the beef to the pot and cook for about 10 minutes, or until browned, stirring occasionally.
- Remove the browned beef from the pot and set aside. Repeat with the remaining beef.
- Return all the browned beef to the pot.
- Stir in the condensed beef broth, Burgundy wine, and minced garlic.
- Reduce the heat to low, cover tightly, and simmer for 1 hour, stirring occasionally.
- Add the sliced carrots, diced potatoes, sliced mushrooms, and onions to the pot.
- Cover and continue to cook for another 1 hour, stirring occasionally to ensure even cooking.
- In a small bowl, mix together water and flour until smooth.
- Gradually stir the flour mixture into the stew.
- Cook, uncovered, for about 10 minutes or until the stew has slightly thickened, stirring occasionally.
