Hearty Beef Curry Stew with Coconut and Vegetables

Sayur Kari Sapi (Beef Curry Vegetable Stew)

Ingredients:

  • 250 grams beef, cleaned and diced
  • 1 potato, peeled and diced
  • 1 carrot, cut into desired shapes
  • Spice Paste:
    • 1 piece of galangal (about 2 inches)
    • 1 piece of ginger (about 2 inches)
    • 1 red chili pepper
    • 5 shallots
    • 5 cloves of garlic
  • 1200 ml water
  • 1 cube Golden Curry seasoning
  • 1 small packet of Kara coconut milk
  • 1 stalk lemongrass, bruised
  • 3 bay leaves
  • Sugar and salt to taste

Instructions:

  1. Prepare the Beef: Pressure-cook the diced beef with water until it begins to steam, about 10 minutes, to tenderize it.

  2. Make the Spice Paste: Blend the galangal, ginger, red chili pepper, shallots, and garlic with a small amount of water until smooth.

  3. Combine Ingredients: In a large pot, add the spice paste, bay leaves, bruised lemongrass, Golden Curry cube, and coconut milk. Stir well.

  4. Add Vegetables: Incorporate the diced potato and carrot into the mixture. Stir to combine all ingredients.

  5. Season: Add sugar and salt according to your taste preferences.

  6. Cook: Simmer the curry until the potato and carrot are cooked through and tender.

  7. Serve: Garnish with crispy fried shallots and serve with steamed rice. Enjoy the rich and flavorful beef curry stew!
