Hearty Beef Rib Soup with Ginger and Vegetables

Simple Beef Rib Soup (Sop Iga Sapi Praktis)

Ingredients:

  • 500 grams beef ribs, cut into pieces
  • 1 thumb-sized piece of ginger, thinly sliced
  • 7 cloves garlic
  • 7 shallots
  • Ground black pepper to taste
  • Ground nutmeg to taste
  • Salt to taste
  • Sugar to taste
  • 2 large potatoes, peeled and diced
  • 2 large carrots, peeled and diced
  • 2 stalks green onions, thinly sliced
  • Fried shallots for garnish
  • Sambal (blended chili paste from boiled chili peppers)
  • Lime, cut into wedges

Instructions:

  1. Prepare the Beef: Wash the beef ribs thoroughly and cut them into smaller pieces. Place them in a pot, cover with water, and bring to a boil. Reduce heat and simmer until the beef is tender. Add the sliced ginger to the pot.

  2. Prepare the Spice Paste: In a blender or food processor, blend the garlic, shallots, black pepper, and nutmeg into a smooth paste.

  3. Cook the Spice Paste: Heat a small amount of oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and golden brown.

  4. Combine Ingredients: Add the sautéed spice paste into the pot with the cooked beef ribs. Stir well to combine, and let it cook for a few more minutes until the flavors meld together.

  5. Cook the Vegetables: While the soup is simmering, cook the diced potatoes and carrots in a separate pot of boiling water until tender. Drain and set aside.

  6. Serve: Place the cooked potatoes and carrots in serving bowls. Ladle the hot beef soup over them. Garnish with sliced green onions, fried shallots, a dollop of sambal, and a squeeze of lime juice.

  7. Enjoy: Serve the soup hot, and enjoy the comforting flavors of this easy-to-make beef rib soup.
