Description
This hearty winter or fall stew combines succulent beef, rich beer, tender pearl onions, fragrant garlic, earthy bay leaves, aromatic oregano, and subtle hints of brown sugar and red wine vinegar. Instructions
- In a plastic bag, combine flour, salt, and black pepper.
- Add beef cubes to the bag and toss until evenly coated with the flour mixture.
- In a large stew pot, combine the coated beef cubes, half of the pearl onions, beer, beef broth, and water.
- Bring the mixture to a boil, then skim off any foam that rises to the surface.
- Stir in the red wine vinegar, brown sugar, dried oregano, bay leaves, and minced garlic.
- Bring the stew to a boil again, then reduce the heat to low, cover, and simmer for 1 and a half hours.
- Add the remaining pearl onions to the stew and simmer uncovered for another 45 minutes, or until the beef is extremely tender and the stew has thickened to your desired consistency.
- For the best flavor, refrigerate the stew overnight to allow the flavors to meld together and to easily remove any excess fat from the surface.
- Before serving, discard the bay leaves and ladle the stew into bowls. Enjoy with steamed white rice or buttered egg noodles.
