Cabbage & White Bean Soup 🥣

Description: A very hearty, homestyle type of soup that is perfect for a snowy winter day. As an option, you can also add pieces of sliced kielbasa to make it more meaty.

Ingredients

1 tbsp Olive oil
1 tbsp Butter
1 Onion
2 Carrots
1 Caraway seed
2 cups Green cabbage
2 cups Water
1 tbsp Light brown sugar
1 cup Diced tomatoes
1 can White beans
1 tbsp Cider vinegar
1/4 cup Parsley
1 Celery rib

Instructions

  1. Saute Onions: In a large soup pot, heat olive oil and butter over medium heat. Add the chopped onion and sauté for about 3 minutes, until softened and translucent.

  2. Add Vegetables: Add the chopped carrots and celery to the pot, and continue to cook for another 3 minutes, stirring occasionally.

  3. Add Caraway Seeds: Sprinkle caraway seeds into the pot and cook for an additional minute, until they become fragrant and release their aroma.

  4. Add Cabbage and Liquid: Stir in the sliced green cabbage, water, light brown sugar, and diced tomatoes. Increase the heat and bring the mixture to a boil.

  5. Simmer: Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for about 25 minutes. This allows all the flavors to meld together and the vegetables to become tender.

  6. Add Beans and Vinegar: After 25 minutes, uncover the pot and add the drained and rinsed white beans, along with the cider vinegar. Cook for an additional 3-5 minutes, or until the beans are heated through.

  7. Garnish and Serve: Just before serving, sprinkle chopped parsley over the soup for a burst of freshness and color. Ladle the hot soup into bowls and serve immediately.
