Cook the Soup: While waiting for the water to boil, blend the red shallots, garlic, pepper, salt, and flavor enhancer until smooth. Once the water is boiling, add the spice blend, chopped sausages, and chicken meatballs to the pot.
-
Sauté the Seasoning: In a separate pan, sauté the remaining spices and parsley until fragrant, then add this mixture to the pot. Stir well, season with salt and flavor enhancer to taste, and let it simmer until the vegetables are tender.
-
Prepare the Ungkep: For the Ayam Tahu Tempe Ungkep, blend the garlic, coriander, galangal, turmeric, lemongrass, and kaffir lime leaves until smooth. Rub this spice mixture generously over the chicken, tofu, and tempeh, ensuring they’re well-coated.
-
Cook the Ungkep: Place the marinated chicken, tofu, and tempeh in a pan with just enough water to cover. Cook over medium heat until the water is absorbed and the flavors meld together.
-
Fry the Ungkep: Once the water has evaporated, the chicken, tofu, and tempeh are ready to be fried until golden and crispy.
-
Prepare the Sambal: Mix sweet soy sauce, chopped chili, and lime juice to create a tangy sambal.
