Chicken Feet Soup with Carrots and Broccoli

Ingredients:

  • 1/4 chicken, cut into pieces
  • 8 chicken feet
  • 1 medium carrot, diced
  • 1 bunch of broccoli
  • 1 stalk of green onion, sliced into 1 cm pieces
  • 1 stalk of celery, sliced into 1 cm pieces
  • 1 thumb-sized piece of ginger, smashed
  • 1 large garlic clove (or 3 small cloves)
  • 1 sachet of Padang-style soup seasoning
  • Salt, sugar, and chicken seasoning to taste
  • Approximately 1 liter of water

Instructions:

  1. Prepare the Ingredients:

    • Wash all the ingredients thoroughly and set them aside.
  2. Initial Boil:

    • In a pot, boil the chicken and chicken feet until they are about half-cooked. Discard the boiling water and drain the chicken and feet.
  3. Prepare the Spice Mix:

    • Blend the garlic and Padang-style soup seasoning together (excluding cinnamon, star anise, and cardamom). Set aside.
  4. Cook the Spices:

    • Heat a small amount of oil in a pan and sauté the blended spice mix until fragrant. Add about 300 ml of water to the pan and bring it to a boil.
    • Add the smashed ginger, cinnamon, star anise, and cardamom, along with the previously boiled chicken and chicken feet. Let it boil, then remove from heat and set aside.
  5. Simmer the Soup:

    • In a large pot, bring approximately 700 ml of water to a boil. Add the sautéed spices, herbs, and chicken mixture. Stir well and bring to a boil again.
    • Add the diced carrot and cook until tender.
  6. Add Vegetables:

    • Once the carrot is cooked, add the broccoli, green onion, and celery. Stir gently and season with salt, sugar, and chicken seasoning to taste. Allow the soup to cook until all the vegetables are tender.
  7. Final Adjustments:

    • Taste the soup and adjust the seasoning if necessary. Once the vegetables are fully cooked, turn off the heat.
  8. Serve:

    • Serve the soup hot. If desired, you can garnish with fried onions, though this is optional and based on personal preference. Enjoy your delicious and warming chicken feet soup!
