Savory Chicken and Mushroom Soup

Ingredients

  • 1000 ml chicken broth
  • 100 grams chicken breast, diced
  • 2 carrots, sliced
  • 1 small head of cabbage, chopped
  • 100 grams white mushrooms (button mushrooms)
  • 5 shiitake mushrooms
  • 5 cloves garlic
  • 1 thumb-sized piece of ginger
  • 2 tablespoons fish sauce
  • 2 tablespoons Rajarasa seasoning (or a similar seasoning mix)
  • 2 teaspoons sesame oil
  • Freshly ground black pepper, to taste
  • 1 sachet Royco chicken seasoning (or any chicken bouillon)
  • Sugar, to taste
  • Salt, to taste

Instructions

  1. Prepare the Ingredients: Begin by slicing the carrots and chopping the cabbage into bite-sized pieces. Dice the chicken breast into small cubes. Set these ingredients aside.

  2. Prepare the Aromatics: Smash the garlic cloves and finely chop them. Set aside. Peel and thinly slice the ginger.

  3. Soak the Mushrooms: Heat water in a bowl. Add the white mushrooms and shiitake mushrooms to the hot water to rehydrate. Let them soak while you continue with the recipe.

  4. Sauté Aromatics: Heat a large pot over medium heat. Add a splash of oil and sauté the garlic and ginger until fragrant and golden brown.

  5. Cook the Soup Base: Pour the chicken broth into the pot with the sautéed garlic and ginger. Bring it to a rolling boil.

  6. Add Vegetables and Chicken: Once the broth is boiling, add the sliced carrots, chopped cabbage, and diced chicken. Reduce the heat and let it simmer for about 3 minutes.

  7. Incorporate the Mushrooms: Drain the rehydrated mushrooms and add them to the pot. Stir to combine.

  8. Season the Soup: Add the Rajarasa seasoning, fish sauce, Royco chicken seasoning, sugar, freshly ground black pepper, and salt. Stir well to ensure the flavors meld together.

  9. Finish the Soup: Allow the soup to simmer for a few more minutes until the vegetables are tender and the chicken is cooked through.

  10. Add Sesame Oil: Just before serving, stir in the sesame oil for added richness and flavor. Adjust seasoning to taste if necessary.

  11. Serve: Ladle the hot soup into bowls and serve with a side of sliced chili peppers and soy sauce if desired.
