Prepare the Ingredients: 
 Begin by slicing the white part of the spring onion into thin rounds. Then, wash the ripe tomatoes and cut them into medium-sized dice. Next, separate the broccoli into florets.Related Articles

Sauté the Onion and Tomatoes: 
 In a large pot, pour a drizzle of extra virgin olive oil. Over medium heat, sauté the sliced spring onion, stirring occasionally with a wooden spoon for about 1 minute until soft and fragrant.

Add the Tomatoes and Bay Leaf: 
 Once the onion has softened, add the diced tomatoes and bay leaf (either fresh or dried). Stir to combine, and let it cook for a few minutes over medium heat.
