Hearty Chickpea and Broccoli Pasta Soup

Ingredients

Mini Pipe Rigate (or any small pasta) 300g
Ripe Tomatoes (chopped) 150g
Fresh Spring Onion (white part only) 70g
Canned Cooked Chickpeas 400g
Fresh Broccoli (cut into florets) 400g
Bay Leaf 1
Water 1L
Extra Virgin Olive Oil q.b. (as needed)
Fine Salt q.b. (to taste)
Black Pepper q.b. (to taste)

Instructions

  1. Prepare the Ingredients:
    Begin by slicing the white part of the spring onion into thin rounds. Then, wash the ripe tomatoes and cut them into medium-sized dice. Next, separate the broccoli into florets.

  2. Sauté the Onion and Tomatoes:
    In a large pot, pour a drizzle of extra virgin olive oil. Over medium heat, sauté the sliced spring onion, stirring occasionally with a wooden spoon for about 1 minute until soft and fragrant.

  3. Add the Tomatoes and Bay Leaf:
    Once the onion has softened, add the diced tomatoes and bay leaf (either fresh or dried). Stir to combine, and let it cook for a few minutes over medium heat.

  4. Add Water and Simmer:
    Pour in the water, reserving 100g of the total amount. Season the mixture with salt to taste. Allow the soup to simmer for about 10 minutes, stirring occasionally.

  5. Prepare the Chickpea Puree:
    In a separate bowl, take the remaining 200g of chickpeas and add the reserved 100g of water. Use an immersion blender to blend them into a smooth puree.

  6. Combine the Puree with the Soup:
    After the 10 minutes of simmering, add the chickpea puree into the soup. Stir to combine and cook for another 5-8 minutes. Make sure to remove the bay leaf before proceeding to the next step.

  7. Cook the Pasta:
    Add the pasta into the soup and cook for about 5 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.

  8. Final Touches:
    Once the pasta is cooked, adjust the seasoning with salt and black pepper to taste. Serve the Minestra di Pasta Ceci e Broccoli hot, drizzling a little extra virgin olive oil over each serving for a finishing touch.
