Yield: 3 1/2 quarts
Ingredients:
- 1 1/2 onions, finely chopped
- 1 celery stalk, chopped
- 1/2 green bell pepper, diced
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 can (28 ounces) whole canned tomatoes with juice
- 2 tablespoons tomato paste
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup water
- 1 cup dry red wine
- 1 pound clams
- 1 pound oysters
- 1 pound mussels
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound white fish (such as cod or halibut), cut into bite-sized pieces
- 1/2 pound scallops
- 1/2 pound crawfish (or additional shrimp if crawfish is unavailable)
- 1 cup cooked lobster meat
- 1 cup crab meat
Instructions:
-
Prepare the Base:
Begin by heating the olive oil in a large Dutch oven over medium heat. Add the finely chopped onions, celery, green bell pepper, and minced garlic. Sauté the vegetables until they become tender and aromatic, about 5-7 minutes. -
Build the Broth:
Stir in the whole canned tomatoes with their juice and tomato paste. Use a spoon to break up the tomatoes into smaller pieces. Mix in the salt, black pepper, water, and dry red wine. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 30 minutes. This allows the flavors to meld together beautifully. -
Prepare the Seafood:
While the broth simmers, clean and prepare your seafood. Scrub the clams, oysters, and mussels under running water to remove any grit. Place them in a saucepan with 1/2 inch of boiling water. Cover and cook gently for about 3 minutes, or until the shells open. Discard any shells that do not open. -
Cook the Seafood:
In the meantime, shell and devein the shrimp, and cut the white fish into bite-sized pieces. After the broth has simmered, add the fish pieces to the Dutch oven. Allow them to cook gently for about 5 minutes. -
Add More Seafood:
Next, add the scallops, shrimp, and crawfish (or additional shrimp if using). Continue to cook for another 5 minutes, or until the seafood is cooked through and tender. -
Finish the Stew:
Finally, add the cooked lobster meat, crab meat, and the previously cooked clams, oysters, and mussels to the stew. Heat through until everything is warmed to serving temperature, and adjust seasoning if needed. -
Serve and Enjoy:
Ladle the hot Cioppino into bowls and serve with crusty bread or over a bed of rice, if desired. This stew is perfect for a cozy dinner, and the medley of seafood will surely impress your guests.
