Hearty Corned Beef & Meatball Soup

Simple Corned Beef Soup 🐴

Ingredients:

  • 2 carrots, sliced into rounds
  • 4 meatballs, cut into small pieces
  • 2 tablespoons corned beef
  • 2 cloves garlic, crushed and finely chopped
  • 1 stalk green onion, chopped
  • 1/2 teaspoon beef bouillon powder
  • A pinch of salt
  • 600 ml water

Instructions:

  1. Boil the Water: In a pot, bring the water to a boil. Add the crushed garlic and then the sliced carrots. Cook until the carrots are just tender but still slightly firm.

  2. Add the Meat and Corned Beef: Stir in the meatballs and corned beef. Mix gently to ensure the corned beef doesn’t clump together.

  3. Season the Soup: Sprinkle in the beef bouillon powder and a pinch of salt. Stir to combine and let the flavors meld.

  4. Finish with Green Onions: Add the chopped green onions. Turn off the heat and let the soup sit for a few moments to allow the flavors to blend.

  5. Serve and Enjoy: Ladle the soup into bowls and serve hot. Enjoy the comforting taste of this simple yet flavorful soup!
