Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 can (10 oz) Ro-Tel tomatoes (diced tomatoes with green chilies)
  • 2 potatoes, peeled and diced
  • 1 cup tomato juice
  • 1 can (15 oz) whole kernel corn, drained
  • Salt and pepper to taste
  • Optional: Cornbread or crackers, for serving

Instructions:

  1. Brown Ground Beef: In a large soup pot or Dutch oven, brown the ground beef over medium-high heat until fully cooked. Drain any excess grease.

  2. Prepare Vegetables: While the beef is browning, prepare the vegetables. Chop the onion, mince the garlic, and peel and dice the potatoes.

  3. Combine Ingredients: Once the beef is cooked and drained, add the chopped onion, minced garlic, Ro-Tel tomatoes, diced potatoes, tomato juice, and drained whole kernel corn to the pot. Stir well to combine all ingredients.

  4. Cook Soup: Bring the mixture to a boil over medium-high heat. Reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the potatoes are tender, stirring occasionally.

  5. Season to Taste: Taste the soup and season with salt and pepper as desired.
