Hearty Date Bran Muffins Recipe

Ingredients

  • 1 cup dates (pitted and chopped)

  • 3/4 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk

Instructions

Prepare the Date Mixture

  1. In a medium saucepan, combine the chopped dates, hot water, and 1 cup of brown sugar.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally.
  3. Allow the mixture to simmer gently for about 5 minutes, or until the dates have softened and the mixture has thickened slightly.

Make the Muffin Batter
