Hearty Date Bran Muffins Recipe

Ingredients
- 1 cup dates (pitted and chopped)
- 3/4 cup hot water
- 1 1/2 cups brown sugar (divided)
- 1/2 teaspoon lemon juice
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 1 large egg
- 1 cup buttermilk
Instructions
Prepare the Date Mixture
- In a medium saucepan, combine the chopped dates, hot water, and 1 cup of brown sugar.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- Allow the mixture to simmer gently for about 5 minutes, or until the dates have softened and the mixture has thickened slightly.
- Remove from heat and set aside to cool completely.
Make the Muffin Batter
- In a large mixing bowl, sift together the flour, baking soda, and salt.
- In a separate bowl, beat the remaining 1/2 cup of brown sugar, egg, and buttermilk together until well combined.
- Add the cooled date mixture to the wet ingredients, stirring until combined.
- Pour the wet mixture into the dry ingredients and fold gently until just mixed. Be careful not to overmix; a few lumps are okay.
Bake the Muffins
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin or line it with paper liners.
- Spoon the muffin batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until the tops of the muffins spring back when lightly touched and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
