  • 1 bay leaf
  • 1 pound dried split peas
  • 8 cups chicken broth
  • 1 ham steak, diced
  • 1 cup milk
  • Hot sauce, optional (for serving)

Instructions:

  1. Sauté Onions: In a large soup pot over medium-high heat, heat the olive oil. Add the chopped onions and season with salt, black pepper, and red pepper flakes. Sauté for about 2 minutes until the onions are softened and fragrant.

  2. Add Garlic and Peas: Stir in the minced garlic, bay leaf, and dried split peas. Cook, stirring constantly, for 1 minute to allow the flavors to meld.

  3. Pour Broth: Pour in the chicken broth and add the diced ham steak. Bring the mixture to a boil, then reduce the heat to medium. Let the soup simmer, stirring occasionally, for about 1 hour or until the peas are tender and the soup has thickened to your desired consistency.

  4. Cool and Remove Bay Leaf: Once the soup is cooked, remove it from the heat and allow it to cool slightly. Remove the bay leaf from the pot and discard it.
