Beef Soup Hungarian Style

Description:
Grandma’s of Old made this in their kettles in Hungary. The soup simmered all day while they worked in the fields. A hearty beef soup. I swear it’s what gave us strong bones as kids.

Ingredients:

3 beef bones with marrow
3 water
4 onions
5 – 6 carrots
5 celery
2 potatoes
2 – 3 garlic cloves
3 parsley
1 tomatoes
1 green pepper
3 – 5 cabbage leaves
12 kohlrabi
NA peppercorns
1 salt
1 bay leaf

Instructions:

  1. Roast the Meat and Bones:

    • Preheat your oven to 300°F.
    • In a roasting pan, place the beef chuck and beef bones with marrow.
    • Roast uncovered for 2 to 2 1/2 hours until they develop a rich, golden color.
  2. Prepare the Soup Base:

    • Drain any excess fat from the roasting pan.
    • Transfer the roasted meat and bones to a large soup pot.
    • Add water to cover the meat and bones completely.
    • Stir in the garlic cloves, peppercorns, onions, bay leaf, and salt.
    • Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, skimming off any foam that forms on the surface.
  3. Add the Vegetables:

    • After simmering for 30 minutes, add the carrots, celery, potatoes, parsley, and kohlrabi to the pot.
    • Continue simmering until the meat and vegetables are tender, usually about 1 to 1 1/2 hours.
  4. Final Touches:

    • In the last 5 minutes of cooking, stir in the tomatoes, green pepper, and cabbage leaves.
    • Remove and discard the bay leaf and any remaining soup bones from the pot.
  5. Chill and Serve:

    • Allow the soup to cool slightly, then refrigerate it.
    • Once chilled, skim off any excess fat that has solidified on the surface.
    • Serve the beef soup hot, garnished with fresh parsley if desired.

Optional Serving Suggestions:

  • Serve the beef as a side dish with boiled potatoes and sauce for a hearty entree.
  • Pair the soup with dumplings for a comforting meal.
  • In Hungary, they traditionally serve Chicken liver dumplings alongside the soup, along with a roux-like tomato sauce for the meat.
