Beef Soup Hungarian Style
Description:
Grandma’s of Old made this in their kettles in Hungary. The soup simmered all day while they worked in the fields. A hearty beef soup. I swear it’s what gave us strong bones as kids.

Instructions:

Roast the Meat and Bones:
- Preheat your oven to 300°F.
- In a roasting pan, place the beef chuck and beef bones with marrow.
- Roast uncovered for 2 to 2 1/2 hours until they develop a rich, golden color.

Prepare the Soup Base:
- Drain any excess fat from the roasting pan.
- Transfer the roasted meat and bones to a large soup pot.
- Add water to cover the meat and bones completely.
- Stir in the garlic cloves, peppercorns, onions, bay leaf, and salt.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, skimming off any foam that forms on the surface.

Add the Vegetables:
- After simmering for 30 minutes, add the carrots, celery, potatoes, parsley, and kohlrabi to the pot.
- Continue simmering until the meat and vegetables are tender, usually about 1 to 1 1/2 hours.

Final Touches:
- In the last 5 minutes of cooking, stir in the tomatoes, green pepper, and cabbage leaves.
- Remove and discard the bay leaf and any remaining soup bones from the pot.

Chill and Serve:
- Allow the soup to cool slightly, then refrigerate it.
- Once chilled, skim off any excess fat that has solidified on the surface.
- Serve the beef soup hot, garnished with fresh parsley if desired.

- Serve the beef as a side dish with boiled potatoes and sauce for a hearty entree.
- Pair the soup with dumplings for a comforting meal.
