Soto Sapi Lobak: A Hearty Indonesian Beef and Radish Soup

Ingredients:

  • 500 grams beef, cut into cubes
  • 2 medium-sized radishes, sliced into half-moons

For the Broth:

  • 5 cloves garlic, smashed
  • 2 stalks lemongrass, smashed
  • 5 bay leaves
  • 5 kaffir lime leaves
  • 2 cm ginger, smashed
  • 1/4 nutmeg
  • 5 cloves
  • Salt, sugar, and pepper to taste
  • Beef bouillon (optional)

For Garnishing:

  • Sliced scallions
  • Chopped celery
  • Fried shallots

Instructions:

  1. Prepare the Beef and Radishes:

    • Cut the beef into bite-sized cubes.
    • Slice the radishes into half-moons.
  2. Prepare the Broth:

    • In a large pot, bring water to a boil.
    • Add the garlic, lemongrass, bay leaves, kaffir lime leaves, ginger, nutmeg, and cloves.
    • Cover the pot and let it boil to infuse the flavors.
  3. Cook the Beef:

    • Once the water is boiling, add the beef cubes.
    • Cook until the beef is tender, which should take about 20-30 minutes depending on the size of the beef cubes.
  4. Season the Broth:

    • Taste the broth and adjust the seasoning with salt, pepper, and sugar to your preference.
    • For an added depth of flavor, you can stir in some beef bouillon if desired.
    • Cover the pot and let it simmer for another 5 minutes to meld the flavors.
  5. Add the Radishes:

    • Stir in the sliced radishes.
    • Continue to cook for an additional 5 minutes, allowing the radishes to soften but retain some of their crispness.
  6. Serve and Garnish:

    • Turn off the heat.
    • Ladle the soup into bowls.
    • Garnish with sliced scallions, chopped celery, and fried shallots.
