Sop Tulang Sapi (Beef Bone Soup)

Ingredients

  • 1/2 kg beef bones
  • 2 large potatoes
  • 1 large carrot
  • 2 packets of coarse soup spices (the type sold for 1000 IDR at local markets)
  • Salt to taste
  • Pepper to taste
  • Water for boiling
  • Cooking oil as needed
  • Optional: flavor enhancer
  • For the spice paste:
    • 2 cloves garlic
    • 3 shallots
    • 1 cm ginger
  • For garnish:
    • Tomato, quartered
    • Finely chopped celery
    • Finely chopped spring onions
    • Fried shallots for sprinkling

Instructions

  1. Boil the Bones:

    • Bring a pot of water to a boil.
    • Once boiling, add the beef bones, one packet of soup spices, and salt. Cook until the meat on the bones is tender. If the water reduces significantly and the meat is not yet tender, add more water as needed.
    • During boiling, skim off any foam that rises to the surface to keep the broth clear and to remove any impurities.
  2. Prepare the Spice Paste:

    • In a separate pan, heat some cooking oil.
    • Sauté the ground spice paste (made from garlic, shallots, and ginger) until fragrant.
    • Add the second packet of soup spices to the pan and continue to sauté briefly.
    • Add the pre-boiled beef bones to the pan and stir to coat the bones with the spices.
    • Pour in the broth from the boiling process. If the amount of broth is insufficient, you can add more water.
  3. Season and Add Vegetables:

    • Season the soup with additional salt, pepper, and optional flavor enhancer to taste.
    • If you want to add potatoes and carrots, do so at this stage. It’s best to add them towards the end of cooking to prevent them from becoming too soft.
  4. Final Touches:

    • Once the soup is cooked through and the vegetables are tender, ladle the soup into serving bowls.
    • Garnish with finely chopped celery, spring onions, quartered tomatoes, and a sprinkle of fried shallots for added flavor and texture.
  5. Serve and Enjoy:

    • Serve the soup hot, and enjoy the rich and comforting flavors of this traditional Indonesian beef bone soup.
