This rich and comforting Indonesian beef bone soup, known as Sup Tulangan Sapi, is a hearty dish that showcases the deep flavors of beef bones simmered with a medley of fresh vegetables. Ingredients

  • 500 grams beef bones (tulangan sapi)
  • 4 carrots, peeled and sliced
  • 2 tomatoes, chopped
  • 250 grams cabbage, roughly chopped
  • 2 stalks celery, sliced
  • 4 stalks green onions, chopped
  • Potatoes (optional, according to preference)
  • Green beans (optional, according to preference)

For the Spice Paste:

  • 7 shallots
  • 7 cloves garlic
  • Salt, to taste
  • Pepper, to taste

Additional Ingredients:

  • 3 liters water
  • Fried onions, for garnish
  • Lime wedges, for serving
  • Spicy soy sauce (sambel kecap) made from chopped chilies, garlic, soy sauce, and salt

Instructions

  1. Prepare the Beef Bones:

    • In a large pot, add 3 liters of water and bring it to a boil.
    • Add the beef bones and simmer until the meat becomes tender. If you prefer a less fatty soup, skim off any floating fat from the surface of the broth during cooking.
  2. Prepare the Vegetables:

    • While the beef bones are simmering, peel and slice the carrots, chop the cabbage, slice the celery, and chop the green onions.
    • If using potatoes and green beans, prepare them as well, cutting the potatoes into chunks and trimming the beans.
  3. Make the Spice Paste:

    • Blend the shallots and garlic into a fine paste.
    • Heat a little oil in a pan and sauté the spice paste until fragrant.
  4. Combine Ingredients:

    • Once the beef bones are tender, add the sautéed spice paste to the pot.
    • Add the chopped vegetables to the pot and continue to simmer until the vegetables are cooked through.
  5. Season the Soup:

    • Adjust the seasoning with salt and pepper to taste.
  6. Serve:

    • Ladle the soup into bowls and garnish with fried onions.
