Bakso Sapi (Indonesian Beef Meatballs)
Ingredients:
For the Meatballs:

- 500 grams frozen beef
- 5 tablespoons tapioca flour
- 1 tablespoon cornstarch
- 1 egg white
- 5 tablespoons crushed ice
- 7 cloves garlic
- 1 teaspoon baking powder
- Salt, pepper, and seasoning to taste
For the Broth:
- 7 cloves garlic, minced
- 2 stalks green onions, chopped coarsely
- 1 stalk celery, whole
- Salt, sugar, pepper, and beef broth powder to taste

Prepare the Meatball Mixture:
- Pound and finely chop the frozen beef, then blend it gradually until smooth. While blending, add the crushed ice, egg white, minced garlic, salt, pepper, and seasoning.
- Once the mixture is smooth, incorporate the tapioca flour and baking powder. Knead the mixture until it is thoroughly combined. The dough should have a consistency that allows for easy shaping; if you prefer a softer texture, you can add more crushed ice.

Chill the Mixture:
- Cover the meatball mixture with plastic wrap and let it rest in the freezer for 30 minutes.

Form the Meatballs:
- Shape the chilled meat mixture into balls and immediately place them into boiling water. Cook until the meatballs float to the surface, then remove and let them cool.

Prepare the Broth:
- Sauté the minced garlic until fragrant. Add the sautéed garlic, green onions, celery, salt, sugar, pepper, and beef broth powder to the pot with the meatball boiling water. Bring the broth to a boil and adjust the seasoning to taste.

- To serve, place the meatballs in a bowl and pour the hot broth over them. You can also add noodles, cabbage, fried onions, green onions, sambal (spicy sauce), and other toppings as desired.
