Sup Iga Sapi: Indonesian Beef Rib Soup

Ingredients:

  • 250 grams beef ribs
  • Cabbage, carrots, and scallions (amount as desired)
  • 2 cloves garlic, thinly sliced
  • 5 shallots, thinly sliced
  • Ground white pepper and ground nutmeg (amount as desired)
  • 2 star anise
  • 5 cloves
  • 5 cm cinnamon stick
  • Water (amount as needed)
  • Salt, cooking oil, and sugar (amount as needed)

Instructions:

  1. Prepare the Vegetables: Begin by cutting the vegetables into bite-sized pieces. Set them aside for later use.

  2. Initial Boil of Beef Ribs: Place the beef ribs in a pot and cover them with water. Bring to a boil and let it simmer for a few minutes. Drain the water to remove impurities, then add fresh water and bring it to a boil again.

  3. Add Spices: Into the boiling pot of beef ribs, add the star anise, cloves, cinnamon stick, ground nutmeg, and ground white pepper. Continue cooking until the beef becomes tender.
