Clear Beef Rib Soup Recipe
Ingredients:
- 500 grams beef ribs
- 1 liter water
- 500 cc beef broth
- 3 organic carrots, diced
- 1/4 cabbage, chopped into small pieces
- 4 potatoes, diced
- 2 young tomatoes, quartered
- 4 shallots, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 stalk celery, tied or cut into 3 cm lengths
- 2 stalks green onions, cut into 3 cm lengths
- Salt to taste
- 1/4 teaspoon ground nutmeg
- Ground black pepper to taste
- 1 teaspoon granulated sugar
- 2 tablespoons cooking oil
Instructions:

Prepare the Beef Ribs:
- Clean the beef ribs and boil them in 1 liter of water until tender. Once cooked, drain the ribs and strain the broth. Set aside.

Cook the Vegetables:
- In a separate pot, cook the diced carrots, cabbage, and potatoes until slightly tender.

Sauté Aromatics:
- Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the sliced shallots and garlic, and sauté until fragrant.
- Add the chopped cabbage, green onions, and celery to the pan. Continue to sauté until the vegetables are aromatic.

Combine Ingredients:
- In a large pot, combine the beef broth with water. Add the boiled beef ribs and the previously cooked vegetables.
- Once the mixture begins to boil, add the sautéed vegetables and aromatics.

Season the Soup:
- Season with salt, ground black pepper, nutmeg, and granulated sugar. Stir in the quartered tomatoes.
- Cook until the soup is well-blended and all ingredients are fully cooked.

- Remove from heat and ladle the soup into bowls. Garnish with fried shallots if desired.
