Beef Rib Soup (Sup Iga Sapi)

Ingredients:

  • 500 grams beef ribs
  • 1000 ml water
  • 2 cardamom pods
  • 1 teaspoon cloves
  • 1 thumb-sized piece of ginger, smashed
  • 1 stalk green onion
  • 1 stalk celery
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon white pepper
  • Salt, to taste
  • 1 potato
  • 1 carrot
  • For the Spice Paste:
    • 6 shallots
    • 3 garlic cloves

Instructions:

  1. Prepare the Beef Ribs:

    • Place the beef ribs, water, cardamom pods, cloves, and smashed ginger into a slow cooker. Cook on high for approximately 1/4 of the cooking time until the meat is starting to become tender.
  2. Add the Spice Paste:

    • Blend the shallots and garlic cloves into a smooth paste. Optionally, you can sauté the spice paste in a little oil for enhanced flavor before adding it to the slow cooker. Add the spice paste to the slow cooker and continue to cook until the beef is halfway cooked.
  3. Incorporate the Vegetables:

    • Peel and chop the potato and carrot into bite-sized pieces. Add them along with the chopped green onion and celery to the slow cooker. Cook until the vegetables are tender and the beef is fully cooked.
  4. Season to Taste:

    • Season the soup with salt and white pepper according to your preference.
  5. Cooking Time:

    • For best results, continue to cook the soup in the slow cooker on high for approximately 6 hours. If you prefer to use a stovetop, bring the soup to a boil, then reduce the heat and simmer until the beef and vegetables are tender.
