Beef Rib Soup (Sop Iga Sapi)

Sop Iga Sapi, a cherished dish in Indonesian cuisine, is a comforting and flavorful beef rib soup that brings together hearty beef ribs with a medley of vegetables and aromatic spices. Perfect for a cozy meal, this dish offers a rich broth infused with the savory goodness of beef and the vibrant flavors of fresh vegetables. Hereโ€™s a step-by-step guide to making this delectable soup.

Ingredients:

  • 500 grams beef ribs, cleaned
  • 1 carrot, thinly sliced
  • 1 potato, diced
  • 1 tomato, diced
  • 7 green beans, cut into small pieces
  • 1 cinnamon stick
  • 2 bay leaves
  • For the spice paste:
    • 5 cloves garlic
    • 1 teaspoon whole black pepper
    • 1/4 teaspoon nutmeg
    • Salt to taste
    • Sugar to taste
    • 1 teaspoon beef seasoning (Royco)
    • 1 tablespoon fried shallots
  • 2 tablespoons vegetable oil
  • 750 ml water

Instructions:

  1. Prepare the Beef Ribs: Start by thoroughly washing the beef ribs under running water. Place them in a pot, cover with water, and bring to a boil. Let the ribs cook for about 15 minutes, then discard the water to remove excess fat and impurities. Rinse the ribs under running water again and set aside.

  2. Cook the Spice Paste: Heat the vegetable oil in a large pot over medium heat. Add the spice paste ingredients: garlic, whole black pepper, and nutmeg. Sautรฉ the mixture along with the cinnamon stick and bay leaves until the spices release their aromatic fragrance.

  3. Simmer the Soup: Add the sautรฉed spices to the pot containing 750 ml of water and the beef ribs. Bring the mixture to a boil. Reduce the heat and let it simmer, allowing the flavors to meld together.

  4. Add Vegetables: Once the broth is aromatic and the beef is tender, introduce the sliced carrot, diced potato, and cut green beans to the pot. Season with salt, sugar, and beef seasoning. Continue to simmer until the vegetables are cooked through.

  5. Finish the Soup: Adjust the seasoning to taste. Once the vegetables are tender and the flavors are well-balanced, stir in the diced tomato and fried shallots. Allow the soup to simmer for an additional few minutes to incorporate the fresh tomato and shallots.

  6. Serve: Your delicious Sop Iga Sapi is now ready to be served. Ladle the soup into bowls and enjoy the rich, flavorful broth and tender beef ribs.

This hearty and flavorful beef rib soup is perfect for family dinners or special occasions. Enjoy the comforting warmth and savory taste of this traditional Indonesian dish!

Feel free to adjust the seasoning to your taste and serve with steamed rice or bread for a complete meal.
