This traditional Indonesian dish, known for its rich and savory flavors, brings comfort in every bowl. Sup Tulang Iga Sapi is a delightful beef rib soup that combines tender meat with aromatic spices and fresh vegetables. Perfect for a hearty meal, this recipe guides you through creating a flavorful, comforting soup that’s sure to impress.

Ingredients:

  • Beef Ribs: 1/4 kg, cleaned and drained
  • Water: Enough for initial boiling
  • Fresh Water: 1 liter
  • Carrot: 1 stick, cut into pieces
  • Potato: 2, cut into pieces
  • Onion: 1, diced (optional)
  • Cinnamon Stick: 1 small
  • Green Onions: 2 stalks, chopped
  • Salt, Sugar, and Bouillon Powder: To taste
  • Margarine: For sautéing
  • Ground Spice Blend:
    • Garlic: 4 cloves
    • Black Pepper: 1/2 teaspoon
  • Garnishes:
    • Emping Melinjo (optional)
    • Celery Leaves
    • Fried Shallots
    • Lime and Bird’s Eye Chili

Instructions:

  1. Prepare the Beef Ribs:

    • Boil enough water to cover the beef ribs in a pot. Add the beef ribs and cook for approximately 15 minutes. This initial boiling helps remove impurities and excess fat. After 15 minutes, discard the water and rinse the beef ribs to remove any residual blood and fat.
  2. Cook the Beef Ribs:

    • In a fresh pot, add 1 liter of water and the cleaned beef ribs. Bring to a boil, then lower the heat and simmer for about 30 minutes, or until the beef is tender. Skim off any foam or impurities that may rise to the surface.
  3. Prepare the Spice Blend:

    • While the beef is simmering, heat margarine in a pan over medium heat. Sauté the ground spice blend (garlic and black pepper) until fragrant. Add the cinnamon stick and continue to sauté until the mixture is aromatic.
  4. Combine Ingredients:

    • Add the sautéed spice mixture to the pot with the simmering beef ribs. Stir well to combine. If the soup level starts to decrease, you can add a bit more water.
  5. Add Vegetables:

    • Incorporate the cut carrots and potatoes into the pot. Season with salt, sugar, and bouillon powder to taste. Continue to cook until the vegetables are tender and cooked through.
  6. Finish the Soup:

    • Adjust seasoning as needed. Stir in the chopped green onions and garnish with fried shallots.
  7. Serve:

    • Ladle the soup into bowls. Serve hot with optional garnishes such as emping melinjo, celery leaves, lime wedges, and bird’s eye chili for added flavor and a touch of heat.

Tips:

  • For a richer flavor, you can add a splash of soy sauce or a dash of tamarind to the soup.
  • The soup can be served with steamed rice or crusty bread for a complete meal.

This recipe for Sup Tulang Iga Sapi embodies the essence of comforting, flavorful home cooking. Enjoy this hearty soup as a delightful centerpiece for any meal!
