Ingredients

  • 500 grams of beef ribs (Iga Sapi)

  • Spring onions and celery, to taste

For the Spice Paste:

  • 4 cloves of garlic, minced
  • 3 shallots, minced
  • 1 candlenut (kemiri), finely ground
  • 1 sachet of black pepper powder
  • 1 thumb-sized piece of ginger, peeled and smashed

Instructions

  1. Prepare the Beef Ribs:

    • Begin by bringing a large pot of water to a boil. Once boiling, add the beef ribs. Allow the ribs to cook for 45 minutes to 1 hour, or longer depending on your preferred tenderness. Skim off any foam that rises to the surface to keep the broth clear.
  2. Make the Spice Paste:

    • While the beef ribs are simmering, heat a little oil in a pan over medium heat. Add the minced garlic, shallots, and ground candlenut. Sauté until fragrant and golden brown.
    • Add the smashed ginger and continue to cook until the spices are aromatic and fully integrated.
  3. Combine Ingredients:

    • Once the beef ribs are tender, add the sautéed spice paste to the pot. Stir well to combine, allowing the flavors to meld.
  4. Prepare the Vegetables:

    • Peel, chop, and wash all the vegetables. Add the carrots to the pot first, followed by the cauliflower, potatoes, and green beans. Continue to simmer until all vegetables are tender.
  5. Season the Soup:
