Spicy Beef Short Rib Soup (SOP Iga Sapi) by Anggi
Ingredients:
- 300 grams beef short ribs
- 1 packet of pre-seasoned SOP mix (containing a complete blend of vegetables)
- 1 stick of cinnamon (optional)
- For the Ground Spice Mix:
- 3 cloves garlic
- 1 teaspoon whole black peppercorns
- A small piece of ginger (about 1 inch)
- 1/4 nutmeg seed
- Salt, to taste
- Beef-flavored bouillon powder (e.g., Masako or Royco), to taste
- For Cooking the Short Ribs:
- 2 kaffir lime leaves
- 2 bay leaves
- A small piece of ginger (about 1 inch)
Instructions:

Prepare the Short Ribs:
- In a large pot, bring water to a boil and add the beef short ribs, kaffir lime leaves, bay leaves, and ginger. Simmer over medium heat for approximately 1.5 hours, or until the ribs are tender and cooked through.

Prepare the Ground Spice Mix:
- While the ribs are cooking, blend the garlic, black peppercorns, ginger, nutmeg, and a pinch of salt into a smooth paste.

Cook the Spice Mix:
- In a separate pan, heat a small amount of oil and sauté the ground spice mix until fragrant and golden brown.

Combine Ingredients:
- Once the short ribs have cooked for 1.5 hours, add the sautéed spice mix to the pot with the ribs. Stir well to combine.

Add Vegetables:
- Cut the potatoes and carrots into chunks and add them to the pot. Cook for a few minutes before adding the green beans, chopped scallions, and chopped celery. Season with additional salt and beef bouillon powder to taste.

Final Touches:
- Continue to simmer until the carrots are tender but not mushy. Turn off the heat and stir in the chopped tomatoes.

Serve:
- Ladle the soup into bowls and garnish with fried shallots for added flavor and texture.
