Fresh Beef Short Rib Soup (Sop Iga Sapi Segar)

This hearty Indonesian beef short rib soup, known as Sop Iga Sapi Segar, is a delightful combination of tender beef ribs, flavorful meatballs, and an assortment of vegetables. With a blend of aromatic spices and fresh herbs, this dish is perfect for a cozy meal with family and friends.

Ingredients:

  • 1 kg beef short ribs
  • 10 beef meatballs
  • 3 sausages, sliced into rounds
  • 2 carrots, peeled and sliced
  • 1 small cabbage, chopped
  • 3 stalks celery, chopped
  • 2 spring onions, sliced
  • 2 tomatoes, quartered
  • 5 cloves
  • 1 cinnamon stick
  • Salt to taste
  • Pepper to taste
  • Beef broth powder to taste
  • For the spice paste:
    • 8 shallots
    • 6 cloves garlic
    • 1/2 nutmeg

Instructions:

  1. Prepare the Beef Ribs:

    • Clean the beef short ribs thoroughly. Boil them in a pot of water for 15 minutes to remove excess fat and impurities. Discard the water.
    • Refill the pot with 2 liters of fresh water and return the ribs to the pot. Simmer for about 1 hour or until the beef is tender.
  2. Make the Spice Paste:

    • While the beef is simmering, prepare the spice paste. Blend the shallots, garlic, and nutmeg until smooth.
  3. Sautรฉ the Spice Paste:

    • Heat a little oil in a pan over medium heat. Sautรฉ the spice paste until fragrant. Add the cloves and cinnamon stick, and sautรฉ briefly to release their aromas.
  4. Combine Ingredients:

    • Once the beef is tender, add the sautรฉed spice paste to the pot. Then add the carrots, meatballs, sausages, and cabbage. Season with salt, pepper, and beef broth powder to taste. Stir well and adjust the seasoning as needed.
  5. Finish the Soup:

    • After the vegetables are cooked and the flavors are well combined, add the chopped celery, sliced spring onions, and tomatoes. Stir gently and cook for a few more minutes until everything is heated through.
  6. Serve:

    • Ladle the soup into bowls. Garnish with fried shallots. For those who enjoy a bit of heat, serve with sliced chili peppers and soy sauce on the side.
