Hearty Indonesian Beef Short Rib Soup with Vegetables

Beef Short Rib Soup (Sop Iga Sapi)

Ingredients:

  • 500 grams beef short ribs
  • 1 head of broccoli
  • 2 large potatoes
  • 1/4 cabbage
  • 1 large carrot
  • 7 cloves garlic
  • 3 shallots
  • 1 packet beef bouillon (Royco)
  • A pinch of sugar
  • Salt to taste
  • Water as needed
  • Ground nutmeg
  • Ground black pepper
  • Optional: chopped scallions and celery for garnish

Instructions:

  1. Prepare the Beef Short Ribs: Rinse the beef short ribs thoroughly under cold running water to remove any impurities. Place the ribs in a pot, cover with water, and bring to a boil. Reduce the heat and simmer until the meat is tender and cooked through.

  2. Prepare the Vegetables: While the beef is cooking, cut the broccoli into florets, peel and dice the potatoes, shred the cabbage, and slice the carrot into thin rounds. Set aside.

  3. Make the Spice Paste: In a blender or food processor, combine the garlic cloves, shallots, ground nutmeg, and black pepper. Blend until smooth.

  4. Cook the Spice Paste: Heat a small amount of oil in a skillet over medium heat. Add the spice paste and sauté until fragrant and golden brown.

  5. Combine and Simmer: Once the beef is tender, remove it from the pot and set aside. Add the spice paste to the pot with the beef broth. Stir well to combine. Then add the potatoes, carrots, and cabbage. Simmer until the vegetables are tender.

  6. Finish the Soup: Return the cooked beef ribs to the pot. Add the broccoli and continue to cook until all the vegetables are fully cooked. Stir in the beef bouillon (Royco), adjust the seasoning with salt and a pinch of sugar, and let simmer for a few more minutes to meld the flavors.

  7. Garnish and Serve: If desired, garnish with chopped scallions and celery. Serve hot and enjoy the comforting flavors of this traditional Indonesian beef soup.
