Hearty Indonesian Beef Trotter Soup with Crispy Shallots and Spicy Sambal

Sop Kaki Sapi (Beef Trotter Soup)

Ingredients:

  • 1 beef trotter (front part), ask your butcher to cut it into pieces
  • 1 ounce carrots, peeled and sliced
  • 1 ounce green beans (optional, can be omitted if unavailable)
  • 2 potatoes (optional, can be omitted if unavailable)
  • 1 stalk scallions, chopped
  • 3 cloves shallots, minced
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 thumb-sized piece of ginger, smashed
  • 4 cloves
  • Fried shallots, for garnish
  • Fresh chili sambal, to taste (for serving)

Instructions:

  1. Prepare the Beef Trotter:

    • Begin by thoroughly cleaning the beef trotter pieces under cold water. Cut the trotter into manageable chunks if not already done by your butcher. For convenience, you may choose to cook only a quarter of the trotter at a time, freezing the remainder for future use.
  2. Initial Cooking:

    • In a large pot, bring enough water to a boil to cover the beef trotter pieces. Add a pinch of salt and black pepper to the boiling water. Introduce the beef trotter chunks to the pot. Once the water returns to a boil, reduce the heat to low and simmer gently until the meat becomes tender. This can take several hours. Alternatively, you can use a pressure cooker to expedite the process.
  3. Add Vegetables and Aromatics:

    • While the trotter is cooking, prepare the vegetables. Wash and cut the carrots, and if using, slice the green beans and potatoes. Also, chop the scallions, mince the shallots and garlic, and smash the ginger. After the trotter has softened, add these vegetables and aromatics to the pot. Continue to cook until the vegetables are tender but still retain their color.
  4. Seasoning and Serving:

    • Adjust the seasoning with additional salt and pepper to taste. Once all the ingredients are cooked through, ladle the soup into bowls. Garnish with fried shallots and serve with a side of fresh chili sambal for added spice and flavor.
