Hearty Indonesian Oxtail Soup with Silken Tofu

Simple Oxtail Soup (Sop Buntut Sapi) Recipe

Ingredients:

  • 250 grams oxtail
  • 750 ml water
  • 2 medium carrots, sliced
  • 1 large potato, diced
  • 1 block silken tofu
  • 1 medium onion, diced
  • Green onions, chopped (for garnish)
  • Celery leaves, chopped (for garnish)

For the seasoning:

  • 8 cloves garlic, minced
  • 1 teaspoon ground coriander
  • ½ teaspoon ground black pepper (to taste)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon margarine (for sautéing)

Instructions:

  1. Sauté the Aromatics:
    Heat the margarine in a large pot over medium heat. Add the diced onion and minced garlic. Sauté until the onions are translucent and fragrant. Stir in the ground coriander and cook for an additional minute.

  2. Simmer the Soup:
    Pour in the water and bring to a boil. Add the oxtail pieces to the pot. Reduce the heat and let it simmer for about 1-1.5 hours, or until the oxtail is tender and cooked through.

  3. Add Vegetables:
    Once the oxtail is tender, add the sliced carrots and diced potato. Continue to simmer until the vegetables are tender.

  4. Incorporate Tofu:
    Gently add the silken tofu to the pot. Let it heat through for just a few minutes—be careful not to stir too vigorously as the tofu can break apart.

  5. Season and Garnish:
    Season the soup with sugar, salt, and ground black pepper. Adjust the seasoning according to your taste. Stir in the chopped green onions and celery leaves.

  6. Serve:
    Once everything is well combined and heated through, remove from heat. Serve hot, garnished with additional green onions and celery leaves if desired.
