Spicy Beef Soup (Sup Daging Sapi Rempah)

Ingredients:

  • 500 grams beef (shank is recommended for a richer taste)
  • 2 carrots, cut into your preferred size
  • 2 potatoes, cut into your preferred size
  • 1 tomato, diced and seeds removed
  • 1 stalk green onion, sliced
  • 6 cloves shallots, thinly sliced
  • 1/2 teaspoon cumin, ground
  • 1/4 teaspoon nutmeg, grated
  • 1/2 teaspoon black pepper
  • 2 cm ginger, smashed
  • Salt, sugar, and bouillon powder to taste
  • 1.5 liters water for boiling

Instructions:

  1. Prepare the Beef:
    In a pressure cooker, add the beef and 1.5 liters of water. Cook for approximately 15 minutes, or until the beef is tender. Skim off any foam that rises to the surface, then remove the beef from the pot. Cut it into bite-sized pieces and set aside. Return the beef to the pot with the remaining broth.

  2. Sauté the Aromatics:
    Heat some oil in a pan. Add the sliced shallots and sauté until fragrant and slightly browned. Transfer the sautéed shallots into the pot with the beef broth.

  3. Simmer the Soup:
    Bring the beef and broth mixture to a boil. Add the diced potatoes, carrots, ground cumin, grated nutmeg, black pepper, and ginger. Stir to combine and let it simmer until the vegetables are tender and the flavors are well blended.

  4. Season to Taste:
    Adjust the seasoning with salt, sugar, and bouillon powder according to your taste. Let the soup simmer for a few more minutes to ensure all flavors meld together.

  5. Serve:
    Serve the soup hot, paired perfectly with steamed rice, crispy fried shallots, crackers, and a side of sambal for a spicy kick. Enjoy this comforting and flavorful dish!
