Japanese Chicken Udon Soup

Ingredients:

  • 4 cups Chicken stock
  • 1 cup Boneless chicken, boiled and cut into pieces
  • 1 tablespoon Ginger, minced
  • 1 1/2 tablespoons Soy sauce
  • 1/2 cup Carrots (Gajjar), finely chopped
  • 1/2 cup Cabbage (Patta Gobi/ Muttaikose), finely sliced
  • 2 tablespoons Sweet corn
  • 4 Button mushrooms, sliced
  • 1/2 cup Spring onions (Bulb & Greens), sliced
  • Salt, to taste
  • 1 cup Udon noodles, boiled
  • 2 Whole eggs

Preparation Time: 20 minutes

Cooking Time: 30 minutes


Instructions:

  1. Prepare the Broth:
    In a large pot, combine the chicken stock, minced ginger, and soy sauce. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let it simmer for 3–4 minutes to allow the flavors to meld together.

  2. Add Vegetables:
    Stir in the finely chopped carrots and let the soup simmer for a few more minutes. Then, add the boiled chicken pieces, cabbage, mushrooms, sweet corn, and spring onion. Allow everything to simmer together for an additional 5 minutes. Adjust salt to taste.

  3. Cook the Noodles:
    While the soup is simmering, cook the udon noodles in a separate pot. Drain and set them aside.

  4. Assemble the Soup:
    In a serving bowl, place the cooked udon noodles at the bottom. Pour the hot soup over the noodles and garnish with remaining spring onions.

  5. Prepare the Eggs:
    Heat a small pan over medium-low heat and add a few drops of oil. Crack the eggs into the pan, careful not to break the yolk. Season with a little salt. Let the eggs cook sunny-side up, without flipping, until the bottom is set. You can cook the yolk until it’s firm or leave it a bit runny based on your preference.

  6. Finish the Dish:
    Place a cooked egg on top of the soup and serve immediately. For an extra touch, serve with some garlic bread on the side!
