Ingredients

For the Spice Paste:

  • 8 cloves garlic, crushed
  • 3 kaffir lime leaves
  • 2 stalks lemongrass, white part only, smashed
  • 3 segments ginger, smashed
  • 2 star anise
  • 2 cloves
  • 3 cardamom pods
  • 1 cinnamon stick
  • 1 teaspoon black pepper
  • 1 teaspoon nutmeg
  • 1 teaspoon sugar

For the Soup:

  • 250 grams beef, cut into cubes
  • 1 daikon radish, peeled and sliced
  • 3 carrots, peeled and sliced
  • 1 tomato, chopped
  • 10 pieces free-range chicken feet
  • 1 stalk green onion, chopped
  • 1 handful celery leaves, chopped
  • 1 handful red beans, soaked and drained
  • Salt and sugar to taste

For Garnishing:

  • Fried shallots

Instructions

  1. Prepare the Meat and Beans:

    • In a large pot, bring water to a boil and add the beef cubes, chicken feet, and red beans. Cook until the water reaches a rolling boil. Discard the water and rinse the meat and beans. Refill the pot with fresh water and continue to simmer until the beef and beans are tender.
  2. Cook the Spice Paste:

    • In a small pan, heat a little oil over medium heat. Add the garlic, kaffir lime leaves, lemongrass, ginger, star anise, cloves, cardamom, and cinnamon stick. Sauté until the spices are fragrant and the garlic is golden brown.
  3. Combine Ingredients:

    • Add the sautéed spice paste to the pot with the beef and beans. Stir to combine and let it cook together to allow the flavors to meld.
  4. Add Vegetables:

    • Incorporate the sliced carrots and daikon radish into the pot. Continue to simmer until the vegetables are tender.
  5. Season the Soup:

    • Stir in the sugar, salt, chopped tomato, green onion, and celery leaves. Let the soup come to a boil, then reduce the heat and simmer for a few more minutes. Adjust seasoning to taste.
