Hearty Klaten-Style Chicken Soup with Fresh Herbs

Klaten-Style Chicken Soup (Sop Ayam Klaten ala Pak Min)

Ingredients:

  • 500 grams of kampung chicken (free-range chicken)
  • 1 large carrot
  • 1 large potato
  • Water, as needed
  • 1 stalk of lemongrass
  • 3 cloves of garlic, crushed
  • 2 bay leaves
  • 1 kaffir lime leaf
  • 1 thumb-sized piece of ginger, crushed
  • Ground pepper, to taste
  • Salt, to taste
  • Sugar, to taste
  • Chicken bouillon powder, to taste
  • Cooking oil
  • Chopped fresh celery and scallions, for garnish

Instructions:

  1. Prepare the Chicken: Clean the chicken thoroughly and cut it into pieces. Boil the chicken in water until tender. Once cooked, set aside.

  2. Sauté Aromatics: Heat some cooking oil in a pot. Add the crushed garlic, ginger, bay leaves, kaffir lime leaf, and lemongrass. Sauté until fragrant.

  3. Cook Vegetables: Pour in enough water to cover the vegetables. Add the diced potatoes and carrots. Cook until the vegetables are tender.

  4. Combine Ingredients: Add the boiled chicken pieces into the pot. Season with ground pepper, salt, sugar, and chicken bouillon powder. Stir well and adjust seasoning to taste.

  5. Simmer: Allow the soup to come to a boil. Reduce the heat and let it simmer for a few minutes.

  6. Serve: Ladle the soup into bowls and garnish with chopped celery and scallions. Serve hot with steamed rice.
