Klaten-Style Chicken Soup (Sop Ayam Klaten ala Pak Min)
Ingredients:
- 500 grams of kampung chicken (free-range chicken)
- 1 large carrot
- 1 large potato
- Water, as needed
- 1 stalk of lemongrass
- 3 cloves of garlic, crushed
- 2 bay leaves
- 1 kaffir lime leaf
- 1 thumb-sized piece of ginger, crushed
- Ground pepper, to taste
- Salt, to taste
- Sugar, to taste
- Chicken bouillon powder, to taste
- Cooking oil
- Chopped fresh celery and scallions, for garnish

Prepare the Chicken: Clean the chicken thoroughly and cut it into pieces. Boil the chicken in water until tender. Once cooked, set aside.

Sauté Aromatics: Heat some cooking oil in a pot. Add the crushed garlic, ginger, bay leaves, kaffir lime leaf, and lemongrass. Sauté until fragrant.

Cook Vegetables: Pour in enough water to cover the vegetables. Add the diced potatoes and carrots. Cook until the vegetables are tender.

Combine Ingredients: Add the boiled chicken pieces into the pot. Season with ground pepper, salt, sugar, and chicken bouillon powder. Stir well and adjust seasoning to taste.

Simmer: Allow the soup to come to a boil. Reduce the heat and let it simmer for a few minutes.
