Ingredients:
- 1 beef shank
- 1 tomato, diced
- 2 potatoes, peeled and cubed
- 1 yellow onion, chopped
- 3 carrots, sliced
- 1/2 cabbage, chopped
- 4 cloves garlic, minced
- 6 teaspoons fresh cilantro, chopped
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt (adjust to taste)
- Fresh ground pepper, to taste
- 4 cups water
- Fresh lime juice, to taste
- 1/4 teaspoon ground cumin
- Optional: Corn kernels, sour cream for garnish
Instructions:

In a large pot, combine the beef shank, diced tomato, cubed potatoes, chopped onion, sliced carrots, chopped cabbage, minced garlic, and 5 teaspoons of chopped cilantro.

Add enough water to cover all the ingredients in the pot. Stir well to combine.

Cover the pot and simmer over low heat for 2 hours, allowing the flavors to meld together.

After 2 hours, uncover the pot, stir the soup, and continue to simmer uncovered for an additional hour. This helps to concentrate the flavors and tenderize the beef.

Just before serving, stir in the ground cumin and squeeze fresh lime juice to taste. Adjust salt, pepper, and cayenne if needed.
