Experience the heartwarming flavors of traditional Indonesian beef ribs soup, made simple and wholesome without any MSG. This recipe brings together tender beef ribs, aromatic herbs, and fresh vegetables to create a comforting dish perfect for any meal. Follow these easy steps to prepare a delicious, MSG-free beef ribs soup.

Ingredients:
- 800 grams of fresh beef ribs
- 1 large carrot
- 1 large potato
- Spices to grind:
- 4 cloves garlic (I used garlic cloves)
- 2 thumb-sized pieces of ginger
- Additional Ingredients:
- 4 kaffir lime leaves
- 1/2 teaspoon white pepper powder
- Salt and sugar to taste
- 3 stalks green onions
- 1 tomato
Instructions:
-
Prepare the Beef Ribs: Cut the beef ribs into manageable pieces and rinse them thoroughly under cold water. In a large pot, bring 1 liter of water to a boil.
-
Cook the Ribs: Once the water is boiling, add the beef ribs to the pot, ensuring they are fully submerged. Allow the water to return to a boil.
-
Add Spices: Introduce the ground spices and kaffir lime leaves into the pot. Reduce the heat to medium and let the beef simmer until tender, stirring occasionally to ensure even cooking.
-
Add Vegetables: When the beef is nearly tender, add the carrot pieces first. After a few minutes, add the potato pieces. Season with salt, sugar, and white pepper powder to taste. Since we are avoiding MSG, be mindful not to overload with vegetables as they can absorb much of the broth’s flavor.
-
Finalize the Soup: Once the beef and vegetables are tender and the flavors are well-balanced, turn off the heat. Transfer the soup to a serving bowl.
-
Garnish and Serve: Garnish the soup with chopped green onions and tomato slices. Serve hot with fried tempeh and sweet soy sauce sambal on the side for a complete meal.
Enjoy your simple and nourishing beef ribs soup, made with love and without the use of MSG. Happy cooking!
