Savory Beef Soup (Sop Daging Sapi)

Ingredients:

  • 2 small pieces of beef (approximately 100 grams), cut into cubes
  • 2 medium potatoes, peeled and diced
  • 1 medium carrot, peeled and diced
  • 10 quail eggs, boiled for 10 minutes, peeled and cleaned
  • 4 stalks of celery leaves, finely chopped
  • 4 red shallots, thinly sliced and fried until golden brown, drained
  • 2 whole garlic cloves, crushed
  • 4 cloves garlic, finely minced
  • Salt, to taste
  • Black pepper, to taste
  • Water, as needed

Instructions:

  1. Prepare the Broth:

    • In a large pot, bring water to a boil with the beef cubes and crushed garlic cloves. Allow it to simmer until the beef is tender and cooked through.
  2. Cook the Vegetables:

    • Once the water is boiling, add the diced potatoes and carrots. Continue to cook until the vegetables are tender. If the water level decreases significantly during cooking, add more water as needed to maintain a soup-like consistency.
  3. Season the Soup:

    • When the vegetables are tender, stir in the minced garlic, salt, and black pepper. Adjust the seasoning according to your taste.
  4. Finish and Garnish:

    • Turn off the heat and add the finely chopped celery leaves and fried shallots to the soup. Stir well to combine.
  5. Serve:

    • Ladle the soup into bowls, ensuring each serving includes a few quail eggs. Enjoy this comforting dish hot.
