Instructions

  1. Heat Oil and Sauté Vegetables: In a Dutch oven or large 6-quart saucepan, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, green bell pepper, and garlic. Stir occasionally and cook for about 5 minutes, or until the vegetables are tender.

  2. Add Beans and Tomatoes: Stir in the red kidney beans, chopped plum tomatoes, and the herb soup mix (if using), blended with 2 1/2 cups of water. Bring the mixture to a boil over high heat, stirring occasionally.

  3. Add Ravioli: Once the mixture reaches a boil, gently stir in the ravioli. Reduce the heat to medium and cook for another 5 minutes, or until the ravioli is tender and heated through. Stir gently to avoid breaking the ravioli.

  4. Serve and Garnish: Ladle the stew into bowls and serve immediately. Top with freshly grated Parmesan cheese, if desired, for an extra layer of flavor.

This quick and easy recipe is not only nourishing but incredibly satisfying. The combination of vegetables, beans, and ravioli creates a rich, comforting soup that your family will love. Plus, it’s ready in just 30 minutes, making it an ideal choice for busy weeknights or last-minute meals. Don’t forget to double the recipe like I did—it’s perfect for freezing and enjoying later on!
