Red Bean and Beef Bone Soup by Sii Trias 💓
Ingredients:
- 1/4 kg beef bones
- 400 g red beans (soaked in water overnight)
- 2 stalks of celery
- 2 carrots
- Fried shallots
- Approximately 600 ml water
Seasonings:
- 5 cloves garlic
- 1/2 packet ground black pepper
- 1/2 tsp ground nutmeg
- 1 tsp salt
- 1 packet beef seasoning (e.g., Royco Beef)
Instructions:

Prepare the Aromatics:
- Start by finely grinding the garlic, salt, ground nutmeg, and black pepper together until well mixed. Heat a pan with a small amount of oil and sauté the aromatic mixture until it becomes fragrant.

Cook the Beans and Beef Bones:
- Add a splash of water to the sautéed mixture and then add the soaked red beans and beef bones. Let them cook together for about 5 minutes to infuse the flavors.

Simmer the Soup:
- Pour in approximately 600 ml of water. Stir in the salt and beef seasoning packet. Taste and adjust the seasoning according to your preference.

Add Vegetables:
- Once the soup starts to boil, add the sliced carrots. Allow the soup to continue cooking until the carrots are tender and the flavors are well combined.

Finish with Herbs:
- Add the sliced celery to the soup just before removing it from the heat. This will give a fresh and aromatic touch to the soup.

- Ladle the soup into bowls and garnish with a generous sprinkle of fried shallots for added texture and flavor.
