Simple home-style cooking is always the best, and every culture loves a hearty stew. This version of beef stew is a beloved favorite in my family! Sometimes, I’ll add parsnips or turnips for extra flavor. On other occasions, I skip the potatoes and serve it over broad noodles. And just for that extra touch, occasionally I top it with fluffy dumplings!
Ingredients:

2 – 2 1/2 lbs | Lean beef |
2 tbsp | Light olive oil |
2 tbsp | Butter |
1 | Onion, chopped |
1/4 cup | Flour |
1 | Bay leaf |
2 sprigs | Fresh thyme |
4 cups | Red wine |
For the veggies: | |
1 lb | Carrots, sliced |
1 lb | Potatoes, cubed |
2 | Onions, quartered |
1 can (28 oz) | Italian tomatoes, diced |
Garnish: | |
1/4 cup | Fresh Italian parsley, chopped |
Instructions:

Prepare the Beef:
- Pat the beef dry with a paper towel to remove excess moisture.

Sear the Beef:
- In a large, heavy saucepan, heat the olive oil and butter together over medium-high heat.
- Add the beef and cook, stirring constantly, until browned on all sides. This usually takes about 5-7 minutes.
- Remove the beef from the pot, cover, and set aside.

Cook the Onions:
- In the same pot with the remaining juices, add the chopped onion.
- Cook, stirring often, until the onion is tender and translucent, about 5 minutes.
- If needed, add a bit more butter to the pot.

Create the Roux:
- Sprinkle the flour over the onions in the pot.
- Stir continuously to combine, cooking until the mixture turns golden brown.

Bring It All Together:
- Return the seared beef to the pot.
- Add in the bay leaf, fresh thyme sprigs, and red wine. If using wine, it’s a good idea to add it first to deglaze the pot, scraping up any browned bits from the bottom.
- Bring the mixture to a boil, stirring to incorporate all the flavors.

Simmer:
- Reduce the heat to low, cover the pot, and let the stew simmer gently for about 1 1/2 to 2 hours, or until the beef is fork-tender.

Add the Veggies:
- After the beef is tender, add in the sliced carrots, cubed potatoes, quartered onions, and diced Italian tomatoes.
- Continue to simmer, uncovered, for an additional 30 minutes, or until the vegetables are cooked to your liking.

- Taste the stew and adjust the seasoning with salt and pepper as needed.
- Sprinkle with freshly chopped Italian parsley before serving.
