Ingredients

Ingredient Quantity
Arborio rice (or any short-grain rice) 200g
Pre-cooked chickpeas 350g
Carrots 80g
White onions 120g
Garlic 1 clove
Vegetable broth q.b. (as needed)
Curry powder 1 tsp
Rosemary 1 sprig
Black pepper q.b. (to taste)
Salt q.b. (to taste)
Extra virgin olive oil q.b. (for sautéing)
Champignon mushrooms 250g

Instructions

Step 1: Prepare the Vegetables and Mushrooms

To begin, clean the mushrooms thoroughly by trimming the base of the stems and gently wiping off any dirt using a damp cloth. Slice the mushrooms into thin, even pieces and set them aside for later use.

Next, peel and finely chop the onions and carrots. Also, crush the garlic clove to release its aromatic flavor.

Step 2: Sauté the Vegetables

Heat a splash of extra virgin olive oil in a large pot or deep pan over medium-low heat. Add the chopped onions, carrots, and garlic to the pot and sauté them for about 5 minutes, or until they soften and release their fragrances. Stir occasionally to ensure even cooking.

Step 3: Add the Mushrooms and Broth

Once the onions and carrots are softened, add the sliced mushrooms to the pan. Continue to sauté for another 5-7 minutes until the mushrooms begin to release their moisture and reduce slightly in size.

Pour in the warm vegetable broth, covering the vegetables and mushrooms. Bring the broth to a simmer and allow it to cook for a few minutes.

Step 4: Cook the Rice and Chickpeas

Once the broth is simmering, add the pre-cooked chickpeas and stir them into the pot. Then, add the rice to the mixture, ensuring it’s evenly distributed throughout the soup. Stir well to combine everything.

Season the soup with salt, black pepper, and curry powder, adjusting the quantities to your personal taste. Add the rosemary sprig, breaking it into smaller pieces for better flavor infusion.

Step 5: Simmer the Soup

Continue to cook the soup, stirring occasionally. Let it simmer for 15-20 minutes, or until the rice is tender and fully cooked. If the soup begins to thicken too much, you can add more vegetable broth or a little water, keeping the consistency to your liking.

Step 6: Final Adjustments and Serving

Once the rice is cooked and the flavors have melded together, taste the soup and adjust the seasoning, adding more salt, pepper, or curry if needed.

Remove the rosemary sprig before serving. Ladle the soup into bowls, and serve hot.

Serving Suggestions

This soup pairs wonderfully with a slice of crusty bread or a light salad. For an added touch, sprinkle some fresh herbs like parsley or a drizzle of extra virgin olive oil just before serving to enhance the flavors.

Tips & Variations

  • Rice Choice: Although Arborio rice is traditionally used in risottos, you can substitute with any other short-grain rice that holds its texture well during cooking. Alternatively, you can use brown rice for a more earthy flavor.
  • Vegetarian/Vegan: This soup is naturally vegetarian and vegan, as long as you use a vegetable-based broth.
  • Flavor Boosters: For extra depth, you can add a splash of lemon juice or a sprinkle of grated Parmesan on top before serving.
  • Make Ahead: This soup stores well in the fridge for up to 2 days and can be reheated gently. You may need to add a bit more broth as it thickens while stored.

This Zuppa di Riso e Ceci is not only a fantastic meal to enjoy on its own but can also be a comforting dish during colder months or a great addition to your weekly meal prep! With its blend of nutritious ingredients and satisfying flavors, it’s a simple yet elegant dish that never goes out of style. Enjoy!
