Simple Beef Soup Recipe

Ingredients:

  • 1/4 kg beef (cut into cubes)
  • 2 carrots (sliced)
  • 3 potatoes (diced)
  • 5 shallots (finely chopped)
  • 1 clove garlic (minced)
  • 1 stalk fresh celery leaves
  • 3 sprigs fresh parsley
  • 1 teaspoon beef-flavored bouillon (Royco or equivalent)
  • Salt to taste
  • Cooking oil
  • Water

Instructions:

  1. Prepare the Beef:

    • Begin by boiling the beef in a pot of water until it reaches a rolling boil. Discard the water used for the first boil to remove impurities. Refill the pot with fresh water and continue cooking until the beef becomes tender.
  2. Sauté the Aromatics:

    • In a separate pan, heat a small amount of cooking oil over medium heat. Sauté the chopped shallots until they become translucent and aromatic. Add the minced garlic and continue to cook until the garlic is fragrant.
  3. Combine Ingredients:

    • Pour the sautéed shallots and garlic into the pot with the beef. Stir to combine and add additional water to the pot as needed to cover the ingredients.
  4. Add Vegetables:

    • Introduce the sliced carrots and diced potatoes into the pot. Allow the soup to simmer until the vegetables are tender.
  5. Season the Soup:

    • Once the vegetables are cooked, add the fresh celery leaves and parsley. Season with beef-flavored bouillon and salt to taste. Stir well to ensure the seasoning is evenly distributed.
  6. Final Cooking:

    • Let the soup cook for an additional few minutes to allow the flavors to meld together.
  7. Serve:

    • Your simple beef soup is now ready to be served. Ladle the soup into bowls and enjoy the comforting, hearty flavors of this classic dish.

This recipe yields a deliciously savory beef soup, perfect for a warming meal any day of the week. Enjoy!
