Beef Rib Soup (Sup Iga Sapi) Recipe
Ingredients:
- 500 grams beef ribs
- 3 carrots, washed, peeled, and cut into chunks
- 2 medium potatoes, washed, peeled, and cut into chunks
- 1 tomato, cut into wedges
- 1/2 onion, finely sliced
- 2 stalks green onions, finely sliced
- 1 stalk celery, finely sliced
- 5 cardamom pods
- 3 cloves (optional, can be skipped)
- 1 cm cinnamon stick
- To taste: Nutmeg
- 1 cm piece ginger, crushed
- 1 teaspoon ground pepper
- To taste: Beef bouillon powder
- To taste: Water
- To taste: Salt, sugar
Spice Paste:
- 5 shallots
- 3 cloves garlic

Prepare the Beef Ribs:
- In a large pot, bring water to a boil and briefly blanch the beef ribs. Discard the water to remove impurities. This step helps to clarify the broth. Drain the ribs and set aside.
- Refill the pot with fresh water, bring it to a boil again, and simmer the beef ribs until they are tender and fully cooked. This can take approximately 1 to 1.5 hours depending on the size of the ribs and your stove’s heat level.
