Prepare the Beef Ribs:
Begin by bringing a pot of water to a boil. Add the beef ribs and let them boil briefly. Discard this water to remove impurities and foam. Rinse the beef ribs and set aside. Refill the pot with fresh water and return the beef ribs to the pot. Simmer until the ribs are tender, which could take approximately 1 to 1.5 hours. -
Prepare the Spice Paste:
While the ribs are simmering, blend the shallots and garlic cloves into a smooth paste. -
Cook the Spice Paste:
Heat a pan and add a bit of oil. Sauté the spice paste, sliced onion, and smashed ginger until fragrant. Once cooked, remove the mixture from the pan and set aside. -
Combine Ingredients:
When the beef ribs are tender, add the sautéed spice paste mixture to the pot along with the carrots and potatoes. Stir to combine. -
Add Aromatics and Seasonings:
Add the cardamom pods, cloves, cinnamon stick, nutmeg, ground pepper, salt, sugar, and beef bouillon powder to the pot. Stir well and adjust seasoning as needed. Continue to cook until the vegetables are tender. -
