Spiced Beef Soup (Sop Daging Sapi Rempah)
Ingredients:

- 500 grams beef, cut into bite-sized pieces
- 1.5 liters water
- 2 carrots, sliced to your preference
- 2 potatoes, diced to your preference
- 1 tomato, chopped
- 6 shallots, thinly sliced
- 1 stalk green onion, finely chopped
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground black pepper
- 1 thumb-sized piece ginger, smashed
- Salt and sugar to taste
- Oil for sautéing
Instructions:

Begin by boiling the beef pieces in a pot with enough water to cover them. Bring it to a vigorous boil to remove any impurities. Skim off the foam and discard the water. Rinse the beef under cold running water to clean.

Return the cleaned beef to the pot with 1.5 liters of fresh water. Bring to a boil again and simmer until the beef is tender and the broth is flavorful. Once done, turn off the heat and set the beef and broth aside.

In a separate pan, heat a little oil and sauté the thinly sliced shallots until they become fragrant and slightly browned. Transfer the sautéed shallots into the pot with the beef broth.

Return the pot to the stove and bring the broth back to a simmer. Add the diced potatoes, smashed ginger, ground nutmeg, cumin seeds, and ground black pepper. Cook until the potatoes are starting to become tender.

Once the potatoes are somewhat softened, add the sliced carrots, chopped green onions, and tomato. Season the soup with salt and sugar to taste. Continue to cook until all the vegetables are tender and the flavors meld together.

Remove from heat and serve the soup hot, garnished with crispy fried shallots if desired.
