Description

This sausage chili recipe has evolved over the years from a basic version found on the back of a sausage package. It’s been tweaked and perfected to create a hearty and flavorful dish that everyone loves!

Ingredients

  • 2 pounds pork sausage
  • 2 onions, chopped
  • 1 can (15 oz) tomato sauce
  • 2 cans (15 oz each) pinto beans, drained and rinsed
  • 1 cup water
  • 1/2 cup chili powder (adjust to taste)
  • 2 tablespoons masa (optional, for thickening)
  • Salt and pepper to taste

Instructions

  1. Cook Sausage and Onions:

    • In a large saucepan, cook the pork sausage and chopped onions over medium-high heat. Stir frequently until the sausage is thoroughly cooked and no longer pink.
  2. Add Remaining Ingredients:

    • Stir in the tomato sauce, drained pinto beans, water, and chili powder. Bring the mixture to a boil.
  3. Simmer:

    • Reduce the heat to low, cover the saucepan, and let the chili simmer for 30 minutes, stirring occasionally. If you prefer a thicker chili quickly, you can add masa from a 2 Alarm box.
  4. Season:

    • Taste and adjust seasoning with salt and pepper as needed.
  5. Serve:

    • Ladle the sausage chili into bowls and serve hot. It makes 6-8 servings, perfect for a crowd or for leftovers.
