Sweet Potato and Chayote Soup

This delightful Sweet Potato and Chayote Soup is a harmonious blend of flavors that satisfies both the palate and dietary needs. It’s a perfect choice for a comforting meal, especially when you want something hearty yet light. This soup is a nod to my mother’s love for chayotes, a vegetable I wasn’t too fond of until I created this recipe. It combines the sweetness of sweet potatoes with the subtle taste of chayotes, creating a soup that’s both nutritious and incredibly simple to make. Plus, it’s vegetarian, thanks to the use of Massel “chicken” bouillon, which contains no animal products. Ideal for a family dinner or a cozy get-together with friends, this recipe promises a bowlful of warmth and flavor.

Ingredients

  • 1 tablespoon butter 🧈
  • 1 yellow onion, diced 🧅
  • 1/4 teaspoon ground pepper 🌶️
  • 5 cups vegetarian chicken stock 🍲
  • 2 bay leaves 🌿
  • 1 large sweet potato, peeled and diced 🍠
  • 2 chayotes, peeled, pitted, and diced 🌱

Instructions

  1. Prepare the Base:
Begin by melting the butter in a medium stock pot or Dutch oven over medium heat. The butter will provide a rich base for the soup and add a lovely flavor.

  2. Cook the Aromatics:
Once the butter is melted, add the diced yellow onion and ground pepper to the pot. Stir occasionally, cooking until the onion becomes soft and translucent, which should take about 5 minutes. The onion will develop a sweet and aromatic flavor, which forms the foundation of your soup’s taste.

  3. Add Stock and Sweet Potatoes:
Pour in the vegetarian chicken stock, ensuring it covers the onions and pepper. Add the bay leaves for an extra layer of flavor. Then, introduce the diced sweet potatoes to the pot. Allow the mixture to simmer until the sweet potato slices become tender. This will take approximately 20 minutes. The sweet potatoes will add a creamy texture and a natural sweetness to the soup.

  4. Remove Bay Leaves:
Once the sweet potatoes are soft, carefully remove the bay leaves from the pot. They have done their job infusing the soup with their subtle, fragrant flavor.

  5. Incorporate Chayotes:
Add the diced chayotes to the pot and bring the mixture to a boil. Chayotes will provide a pleasant, slightly crisp texture and a hint of freshness to the soup.

  6. Simmer and Blend:
Reduce the heat to medium and let the soup simmer until the chayotes are tender, which should take about 15 minutes. After the vegetables are cooked through, remove the pot from heat and allow the soup to cool slightly.

  7. Puree the Soup:
For a smooth and creamy texture, puree the soup using a food processor, blender, or an immersion blender. Blend until the soup is completely smooth and free of lumps. This step transforms the soup into a velvety delight, blending all the flavors beautifully.

  8. Serve:
Once pureed, the soup is ready to be served. Enjoy it hot, garnished with a sprinkle of fresh herbs if desired, and pair it with crusty bread for a complete meal.
