Ingredients:

  • 1 kg dried flat noodles (Mie Taiwan)
  • 1 beef shank (approximately 1 kg)
  • 2 radishes (lobak), peeled and cut into chunks
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 5 cloves cloves
  • 1 cinnamon stick (about 1-inch piece)
  • 3 cloves garlic, minced
  • 1/2 teaspoon five spice powder
  • 1/2 teaspoon ground black pepper
  • 1 packet beef bouillon (such as Royco)
  • Sugar, to taste
  • Salt, to taste
  • Water, as needed

Instructions:

  1. Prepare the Beef Shank:

    • Briefly boil the beef shank to remove excess fat and impurities. Discard the initial boiling water and clean the shank. This step ensures a clearer, cleaner broth.
  2. Prepare the Broth:

    • Cut the beef shank into 1 cm thick slices. In a large pot, sauté the minced garlic until fragrant. Add 3 liters of water (or enough to cover the beef) along with the beef bouillon packet.
    • Stir in the oyster sauce, soy sauce, dark soy sauce, cloves, cinnamon stick, five spice powder, and ground black pepper.
    • Add the cleaned beef shank slices and radish chunks. Bring to a boil, then reduce heat and simmer for about 1 hour on low heat. This allows the flavors to meld and the beef and radish to become tender. Avoid stirring too frequently to keep the meat intact and tender.
  3. Cook the Noodles:

    • In a separate pot, cook the dried flat noodles according to the package instructions, usually for about 5 minutes. Drain and set aside.
  4. Assemble and Serve:

    • To serve, place a portion of the cooked noodles into each bowl. Ladle the hot beef and radish broth over the noodles, ensuring each bowl gets a good amount of beef and radish.
