Tongseng Sapi Tanpa Santan: A Delightful Indonesian Beef Stew without Coconut Milk

Ingredients

Main Ingredient:

  • 500 grams beef

Spices and Seasonings:

  • 3 cloves garlic
  • 5 shallots
  • Salt, to taste
  • 1 thumb-sized piece of ginger
  • 3 thumb-sized pieces of galangal
  • 1 thumb-sized piece of turmeric
  • 2 kaffir lime leaves
  • 3 bay leaves
  • 1 stalk lemongrass
  • 2 tomatoes
  • Cabbage, to taste
  • 10 whole birdโ€™s eye chilies
  • Sweet soy sauce, to taste
  • Tamarind paste, to taste
  • Cooking oil, for sautรฉing
  • 1 liter water

Instructions

  1. Prepare the Beef: Begin by boiling the beef until tender. Once the beef is tender, remove it from the pot and cut it into small pieces. Set aside.

  2. Blend the Spices: Using a mortar and pestle or a food processor, blend the garlic, shallots, ginger, galangal, and turmeric until you achieve a smooth paste. Leave the lemongrass, bay leaves, kaffir lime leaves, and whole birdโ€™s eye chilies aside as they will be used whole.

  3. Sautรฉ the Spice Paste: Heat a generous amount of cooking oil in a large pan over medium heat. Add the spice paste to the hot oil and sautรฉ until fragrant. Then, add the lemongrass, bay leaves, kaffir lime leaves, and birdโ€™s eye chilies to the pan and continue to sautรฉ for a few more minutes.

  4. Combine Beef and Spices: Add the pieces of beef to the pan, mixing well with the spices. Pour in enough water to cover the beef and bring to a simmer. Allow the mixture to cook until the beef is fully tender and the flavors have melded together.

  5. Season the Stew: Once the beef is tender, add the sweet soy sauce and tamarind paste to the stew. Stir well to ensure the flavors are evenly distributed.

  6. Add Vegetables: Finally, add the cabbage and tomatoes to the stew. Cook for an additional 5-10 minutes until the vegetables are tender but still retain some crunch.

  7. Serve: Your Tongseng Sapi Tanpa Santan is now ready to be enjoyed. Serve hot with steamed rice for a complete and satisfying meal.

This Tongseng Sapi Tanpa Santan offers a unique and rich flavor profile, reminiscent of traditional Indonesian cuisine, but without the use of coconut milk, making it a lighter option while still packing a punch of deliciousness. Enjoy this hearty beef stew with your family and friends, and savor the intricate blend of spices and the tender beef that make this dish truly special.
