Instructions:

  1. Prepare the ingredients:
    Begin by prepping the vegetables. Peel the carrot and cut it into small cubes. Peel and chop the onion into small pieces. Tie the sprigs of rosemary and thyme together with kitchen twine to create a bouquet of herbs. Lastly, cut the turkey breast into evenly sized pieces, approximately 2 cm thick.

  2. Sauté the vegetables:
    In a large casserole or pot, heat the extra virgin olive oil over medium heat. Once the oil is hot, add the chopped onion and carrot. Sauté for about two minutes until the vegetables soften and begin to release their aromas.

  3. Add the flour:
    Sprinkle the flour into the casserole and stir it into the vegetables. Cook for another 1-2 minutes, allowing the flour to absorb the oil and create a slight roux, which will help thicken the sauce later.

  4. Add the tomato passata and broth:
    Pour in the tomato passata and the beef broth. Stir everything together until well combined. Season with salt and pepper to taste. Add the herb bundle (rosemary and thyme). Cover the pot with a lid and let it simmer for about 40 minutes.

  5. Add the potatoes:
    After 40 minutes, add the cubed potatoes to the casserole. Stir gently to combine. Cover the pot again and continue cooking for another 20 minutes, or until the potatoes are tender and the turkey is fully cooked.

  6. Finishing touches:
    Once the stew is done, turn off the heat. Remove the herb bundle from the pot, ensuring no stems remain in the stew. Stir the stew gently, taste, and adjust the seasoning if necessary.

  7. Serve:
